How to clean Nigerian dry fish in 4 steps
Nigerian dry fish is a very important ingredient for making most local Nigerian meals, however, because of how they are processed, they need to be properly cleaned before cooking with them.
Here is a simple method you can use to wash your Nigerian dry fish especially smoked eja osan (asa fish), mangala fish, smoked catfish….
- Rub salt all over the fish
- Rinse under running tap, as you rinse, gently rub the fish with your hand to remove any kind of dirt attached to the skin of the fish. You can repeat this to ensure you are able to get as much dirt off the fish
- Place fish in a bowl and pour in hot water to cover the fish in the bowl and leave for 3-5 minutes (depending on how dry the fish is).
- Pour out the water from the bowl, if you wish, you can open up the fish to take out the bones inside the fish, then place the fish in a bowl, add in some salt , pour cold water and rinse one last time.
Your Nigerian dry fish should be clean and ready to add to your soup or stew.
