How to season and grill fish at home

Ingredients

  • 6 tilapia/croaker fish cuts
  • 1-2 tablespoons of black pepper
  • 1 -2 tablespoons of Cameroon pepper
  • 1-2 table spoons of ginger powder / 1 tuber of ginger (peeled and grated)
  • 1 tablespoon of garlic /3 cloves of garlic (peeled and grated)
  • 2 Seasoning cubes
  • Salt
  • Onion (1 bulb)
  • 2-4 tablespoons of vegetable oil
  • 1 – 2 sweet orange(s)

 

 

Method

  • Wash fish thoroughly
  • Prepare marinade- in a bowl ,pour in vegetable oil, add in the black pepper, Cameroon pepper, ginger, garlic, seasoning cubes, salt, mix the ingredients thoroughly and set aside
  • Cut each orange into 8 wedges
  • Slice onions thinly
  • Dry the fish with kitchen roll
  • Make slant cuts (2 or 3) across the flat sides of the fish
  • Rub the marinade all over the fish, concentrate more into the slant cuts
  • Transfer fish into a foil
  • Squeeze some of the orange juice all over the fish, place some of the orange wedges on the fish
  • Place the sliced onions on the fish
  • Wrap up the foil paper
  • Place in the fridge for at least 1hr
  • Pre heat oven /air fryer @ 180 degree Celsius  for 10 minutes
  • Place the foil with fish in oven/ airfryer for 20 minutes
  • To achieve a dry crust on the fish, open up the foil paper and leave in oven for another 10- 15 minutes
