RICE WITH VEGETABLE CHICKEN STEW

INGREDIENTS QUANTITIES

Chicken (into small cubes) 6 pieces
Tomatoes (blended and boiled dry) 8 large  size
Onions (sliced) 1 small bulb
Onions (blended and boiled dry) 6 large size
Tatashe 4 large size
Tin tomatoes 2 tablespoons
Vegetable oil 3 cooking spoons
Garlic (finely chopped) 2 cloves
Ginger (finely chopped) 1 small root
Curry ½ teaspoon
Thyme ½ teaspoon
Seasoning cubes 4
Seasoning powder 1 sachet
Salt To taste

* In a clean pot, heat vegetable oil for 1 minute, add the sliced onions, chopped ginger & garlic, stir properly and fry for 2 minutes.
* Add the boiled blended tomatoes, onions, pepper, tatashe, and tin tomatoes, seasoning , curry & thyme. Stir well and fry for 10 minutes or until tanginess is off.
* Add the friend chicken and stock, add salt to taste stir well and cook 10 minutes.
* Add blanched spinach, stir well, cover and cook for 2 minutes.
* Turn off heat.
* Serve with rice.
