Ukazi soup

UKAZI SOUP  preparation time : 42 minutes

 

cooking time : 1 hr 10 minutes

INGREDIENT RECIPE
ukazi leaves Slice and wash ukazi thoroughly, drain (set aside) – 10 minutes

Peel, wash and boil cocoyam in water for 20 minutes. Mash properly(set aside)

wash and debone smoked fish (5 minutes)

wash and blend rodo with little water in electric blender.(5 minutes)

mix egusi with little water to form thick paste (2 minutes)

In a separate pot, add stockfish, beef, ponmo onions, seasoning, salt to taste and allow to cook for 20-25 minutes till meat is tender

Add 1-2 cooking spoons of blended rodo and palm oil and leave to cook for 20 minutes

Add in egusi paste which has been balled in small sizes, smoked fish, ground cray fish  and leave to cook for another 10 minutes.

add ukazi leaves to boiling mixture, then add the mashed cocoyam. Leave to cook for 15 minutes.
