EGUSI SOUP  preparation time : 33 minutes cooking time : 1 hr 5 minutes
INGREDIENT RECIPE
Ground Egusi (melon) Thoroughly Wash beef and ponmo and stockfish (10 minutes)Place in a clean pot ,add in chopped onions (half bulb), add seasoning and salt to taste ,cover pot and leaver to boil till tender (25-30 minutes)wash and debone smoked fish (5 minutes)thoroughly wash chopped ugwu leaves to remove sand and dirt completely .(10 minutes)

*how to wash vegetables

Place chopped vegetables in a large bowl, fill with plenty water, ruffle vegetable a bit in water, scoop vegetable out of water, pour out water and repeat process 4-6times.

wash and blend rodo with onion  with little water in electric blender (5 minutes)

Put egusi in a clean bowl and mix with blended rodo to form thick paste. (3 minutes)

In a clean pot,heat palmoil ,drop in egusi paste in small lumps to fry : fry till dry for 7- 10 minutes . Add the fried egusi into the boiling stock and leave to boil for 10 minutes.

Add in smoked fish and crayfish

leave to cook for 10 minutes

Then add in washed ugwu leaves , leave to boil for 3- 5 minutes.

EGUSI SOUP IS READY!

Smoked fish
2-3 cooking spoons of palm oil
2 tablespoons of ground crayfish
1 onion bulb
1-2 cooking spoons of blended rodo
Beef
chopped Ugwu leaves
seasoning cubes
salt
 ponmo
