Bitter leaf soup
|BITTERLEAF SOUP/ OFE ONUGBU SOUP
||preparation time – 45 minutes
cooking time- 50- 55 minutes
|Ponmo + beef||Thoroughly wash beef, ponmo and stockfish .Place in clean pot , Add in chopped onions, seasoning cube and salt to taste, cook till tender with water (half – 1 litre)- (25-30 minutes)Wash and de-bone smoked fish (5 minutes)
Wash and blend rodo in electric blender (5 minutes)
Peel the cocoyam, wash and cook in water in a separate pot for about 20-25 minutes .Then pound cocoyam in mortar until it draws.
Add palm oil and 1 teaspoon achi which serves as a thickener to pounded cocoyam
add mixture to boiling ingredients, stir properly for about 2 minutes.
Add in ground crayfish ,smoked fish and blended rodo, boil for 15 minutes
Finally add the properly washed bitter leaf and leave to boil for 8 minutes.
check for taste and add more seasoning if required,leave to cook for 1-2 minutes.
SOUP IS READY!
